Grilled Cabbage with Sausage

Ingredients

The main ingredients

  • 1 large purple cabbage
  • 4–6 pieces Andouille Sausages
  • to taste olive oil
  • to taste salt
  • to taste pepper

Mustard Seed Vinaigrette

  • 2 tablespoons whole grain mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • tablespoons honey
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon fresh chives

Instructions

  1. Preheat the grill on high heat.
  2. Slice the cabbage into thin slices, no thicker than ½ inch, and remove the core.
  3. Clean and grease the grill well, then brush each side of the cabbage with olive oil and season with salt and pepper.
  4. Lower the grill to medium-high heat and add the sausages and cabbage.
  5. Grill each side of the cabbage for 6-8 minutes, closing the grill, until slightly soft but not collapsing.
  6. Grill the sausages until seared and plumped.
  7. Place the cabbage steaks on a large platter and spoon half of the dressing over them.
  8. Slice the sausages diagonally and scatter them over the cabbage, then spoon the remaining dressing on top.
  9. Garnish with chopped chives and chive blossoms.
