Grilled Cabbage with Sausage

Instructions
- Preheat the grill on high heat.
- Slice the cabbage into thin slices, no thicker than ½ inch, and remove the core.
- Clean and grease the grill well, then brush each side of the cabbage with olive oil and season with salt and pepper.
- Lower the grill to medium-high heat and add the sausages and cabbage.
- Grill each side of the cabbage for 6-8 minutes, closing the grill, until slightly soft but not collapsing.
- Grill the sausages until seared and plumped.
- Place the cabbage steaks on a large platter and spoon half of the dressing over them.
- Slice the sausages diagonally and scatter them over the cabbage, then spoon the remaining dressing on top.
- Garnish with chopped chives and chive blossoms.
