Instructions
- Heat the oil in a large skillet over medium-high heat and brown the sausage on both sides.
- Transfer the sausage to a plate and cover to keep warm.
- In the same pan, add butter and sauté the diced onions until soft and starting to brown.
- Add the shredded cabbage, cover, and cook until it starts to wilt.
- Uncover and stir the cabbage, cooking until slightly wilted but still crisp-tender.
- Add the drained diced tomatoes, Cajun seasoning, salt, and cooked sausage, then stir fry until the cabbage is fully wilted and excess liquid has evaporated.
