Ingredients

  • 1 tbsp Olive oil
  • 12 oz Andouille Sausage
  • 2 tbsp Unsalted butter
  • ½ large Onion
  • 1 medium head Cabbage
  • 1 14.5-oz can Diced tomatoes
  • 1 tsp Cajun seasoning
  • ½ tsp Sea salt

Instructions

  1. Heat the oil in a large skillet over medium-high heat and brown the sausage on both sides.
  2. Transfer the sausage to a plate and cover to keep warm.
  3. In the same pan, add butter and sauté the diced onions until soft and starting to brown.
  4. Add the shredded cabbage, cover, and cook until it starts to wilt.
  5. Uncover and stir the cabbage, cooking until slightly wilted but still crisp-tender.
  6. Add the drained diced tomatoes, Cajun seasoning, salt, and cooked sausage, then stir fry until the cabbage is fully wilted and excess liquid has evaporated.
