Instructions
- Slice the zucchini and yellow squash into half-rounds and the red bell pepper and red onion into strips, then place them in a bowl.
- Slice the sausage into rounds and cook in a skillet with 1 Tbsp of cooking oil over medium heat until browned, then transfer to a bowl.
- Drizzle the vegetables with the remaining cooking oil and sprinkle with the spices, then toss to coat.
- Increase the skillet heat to medium-high and sauté the vegetables until slightly tender, then remove from heat.
- Add the cooked sausage and parsley to the vegetables, toss to combine, and adjust seasonings as needed.
- Serve immediately or divide into portions and refrigerate.
