Ingredients

The vegetables

  • 1 each zucchini
  • 1 each yellow squash
  • 1 each red bell pepper
  • 1 each red onion
  • 2 Tbsp chopped fresh parsley

The protein

  • 14 oz Andouille sausage

The seasonings and oil

  • 2 Tbsp cooking oil
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp cayenne pepper
  • ¼ tsp salt
  • ¼ tsp freshly cracked black pepper

Instructions

  1. Slice the zucchini and yellow squash into half-rounds and the red bell pepper and red onion into strips, then place them in a bowl.
  2. Slice the sausage into rounds and cook in a skillet with 1 Tbsp of cooking oil over medium heat until browned, then transfer to a bowl.
  3. Drizzle the vegetables with the remaining cooking oil and sprinkle with the spices, then toss to coat.
  4. Increase the skillet heat to medium-high and sauté the vegetables until slightly tender, then remove from heat.
  5. Add the cooked sausage and parsley to the vegetables, toss to combine, and adjust seasonings as needed.
  6. Serve immediately or divide into portions and refrigerate.
