Instructions
- Slice the sausage into ¼-½ inch thick slices.
- Sauté the sausage and cooking oil in a deep skillet over medium heat until browned.
- Dice the bell pepper and add it to the skillet, sauté for about one minute.
- Add the spices to the skillet and sauté for one minute more to toast them.
- Add the fire roasted diced tomatoes, rice, and chicken broth to the skillet and stir to combine.
- Cover the skillet, increase heat to medium-high, and bring to a boil.
- Once boiling, reduce heat to low and let it simmer for 20 minutes.
- Remove from heat and let it rest for an additional 5 minutes with the lid on.
- Fold the sausage and rice to redistribute, then top with sliced green onions and serve.
