Cajun Sausage and Rice Skillet

Ingredients

  • 14 oz. Andouille sausage
  • 1 Tbsp cooking oil
  • 1 medium bell pepper
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • tsp cayenne pepper
  • tsp freshly cracked black pepper
  • 1 15 oz. can fire roasted diced tomatoes
  • 1 cup long grain white rice
  • 1.5 cups chicken broth
  • 2 medium green onions, sliced

Instructions

  1. Slice the sausage into ¼-½ inch thick slices.
  2. Sauté the sausage and cooking oil in a deep skillet over medium heat until browned.
  3. Dice the bell pepper and add it to the skillet, sauté for about one minute.
  4. Add the spices to the skillet and sauté for one minute more to toast them.
  5. Add the fire roasted diced tomatoes, rice, and chicken broth to the skillet and stir to combine.
  6. Cover the skillet, increase heat to medium-high, and bring to a boil.
  7. Once boiling, reduce heat to low and let it simmer for 20 minutes.
  8. Remove from heat and let it rest for an additional 5 minutes with the lid on.
  9. Fold the sausage and rice to redistribute, then top with sliced green onions and serve.
