Cajun Style Shrimp and Sausage

Ingredients

  • 16 ounces shrimp (16 – 20 count, raw peeled and deveined)
  • 8 ounces Andouille sausage (sliced)
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic (finely diced)
  • 1 small onion (diced)
  • 6 ounces mushrooms (sliced)
  • 1 cup okra (sliced)
  • 2 red bell peppers chopped into chunks
  • ½ cup chicken stock or vegetable stock
  • ½ teaspoon sea salt
  • cups heavy cream
  • ½ cup grated Romano cheese
  • 1 tablespoon Italian parsley (chopped)
  • 4 cups cooked brown rice (cooked per instructions on the box)

Instructions

  1. Coat the shrimp with one tablespoon of Cajun seasoning.
  2. Heat olive oil in a large skillet over medium-high heat and sauté the shrimp for 2-3 minutes until almost fully cooked, then set aside.
  3. In the same pan, add butter and sauté onions, mushrooms, and peppers for 3-5 minutes until soft.
  4. Add okra, sausage, and garlic to the pan and sauté for another 3-4 minutes.
  5. Pour in chicken broth, cream, and Romano cheese, reduce heat, and let the sauce reduce by about one-third while stirring occasionally.
  6. Re-season with sea salt and black pepper, and add shrimp back to the pan, heating until the mixture reaches a minimum temperature of 165 degrees.
  7. Serve the mixture over brown rice or your favorite grain.
