Ingredients

The main ingredients

  • 1 lb shrimp, peeled and deveined
  • 12 oz andouille or other pre-cooked sausage, cut into 1/4 inch thick slices
  • 1 small zucchini, sliced into bite-sized pieces
  • 1 small yellow squash, sliced into bite-sized pieces
  • 8 oz mushrooms, quartered (about 3 cups)
  • 4 cups cabbage, sliced
  • 2 tbsp avocado oil (or ghee)

The seasoning

  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 tsp sea salt
  • 1 tsp pepper
  • ½ tsp thyme
  • ½ tsp cayenne pepper (optional)

Instructions

  1. Prepare the shrimp, sausage, and vegetables as noted.
  2. Combine all seasoning ingredients in a small bowl and mix well.
  3. Heat a large skillet or wok over medium heat and add avocado oil.
  4. Add the shrimp, sausage, and all vegetables to the skillet and toss to mix.
  5. Pour in the seasoning mixture and mix to coat everything.
  6. Cook for about 12-15 minutes, stirring occasionally, until the shrimp is cooked and vegetables are tender.
  7. Serve and enjoy.
