Spanish White Bean, Shrimp and Sausage Skillet

Instructions
- Heat olive oil in a skillet over medium-high heat and sear the sausage on each side, then set aside.
- In the same pan, add the diced onion and cook for two minutes until fragrant.
- Add the chopped garlic and diced bell pepper, reduce heat to medium, and cook for 3-4 minutes.
- Stir in the diced tomatoes with their juices and sauté for an additional two minutes.
- Add the rinsed white beans, water, fish sauce, apple cider vinegar, smoked paprika, cumin, and salt, then stir and bring to a gentle simmer for 3-4 minutes.
- Add the shrimp and continue simmering until they turn pink and are cooked through, allowing some liquid to evaporate.
- Return the browned sausage to the skillet and stir everything together.
- Taste and adjust the salt as needed, adding chili flakes if desired.
- Garnish with fresh parsley or cilantro and serve.
