Spanish White Bean, Shrimp and Sausage Skillet

Ingredients

  • 1 piece andouille sausage (chicken or soy), sliced
  • 1–2 tablespoons olive oil
  • ½ piece onion, diced
  • 4 cloves garlic, rough chopped
  • 1 piece red or yellow bell pepper, diced
  • 2 medium-large tomatoes, diced with juice
  • 1 can white beans, rinsed and drained
  • ½ cup water
  • 1 teaspoon fish sauce
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • 8 ounces shrimp
  • ¼ cup chopped Italian parsley or cilantro

Instructions

  1. Heat olive oil in a skillet over medium-high heat and sear the sausage on each side, then set aside.
  2. In the same pan, add the diced onion and cook for two minutes until fragrant.
  3. Add the chopped garlic and diced bell pepper, reduce heat to medium, and cook for 3-4 minutes.
  4. Stir in the diced tomatoes with their juices and sauté for an additional two minutes.
  5. Add the rinsed white beans, water, fish sauce, apple cider vinegar, smoked paprika, cumin, and salt, then stir and bring to a gentle simmer for 3-4 minutes.
  6. Add the shrimp and continue simmering until they turn pink and are cooked through, allowing some liquid to evaporate.
  7. Return the browned sausage to the skillet and stir everything together.
  8. Taste and adjust the salt as needed, adding chili flakes if desired.
  9. Garnish with fresh parsley or cilantro and serve.
