Ingredients

  • 1 tablespoon olive oil
  • ½ pound skinless chicken breast, cut into ½ – 1 inch pieces
  • 8 oz andouille sausage, cut into ½ – 1 inch pieces
  • 1 cup chopped red bell pepper
  • 1 cup chopped medium green bell pepper
  • 1 cup chopped red onion
  • 1 stalk celery, diced
  • 1 cup chopped squash
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon thyme
  • to taste salt and pepper
  • 1 teaspoon cayenne pepper (optional)

Instructions

  1. Combine the chicken and sausage in a large bowl and set aside.
  2. Place the chopped vegetables in a separate bowl and drizzle both bowls with olive oil, then season with the spices.
  3. Heat a skillet over medium-high heat and add the sausage and chicken.
  4. Cook for 3-4 minutes until the chicken is no longer pink, then remove from the skillet.
  5. Add the vegetables to the skillet and cook for 4-5 minutes until they are soft.
  6. Return the chicken and sausage to the skillet, mix well, and serve.
