Cajun Jambalaya Pasta

Cajun seasoning or more to taste

Instructions
- 1. Boil salted water in a large pot and cook the pasta according to package directions.
- 2. In a large pan, heat 1 tablespoon of olive oil over medium heat and sauté the onions and peppers for 4-6 minutes until softened; season with Cajun seasoning, salt, and pepper.
- 3. Remove the peppers and onions from the pan and keep warm.
- 4. Wipe the pan clean and heat the remaining olive oil over medium-high heat.
- 5. Add the chicken, season with salt, pepper, and Cajun seasoning, and cook for 5-6 minutes until cooked through.
- 6. Add the sausage and cook for an additional 3-4 minutes.
- 7. Add the shrimp and cook for 2-3 minutes until they are pink and opaque.
- 8. Return the reserved peppers and onions to the pan and mix well.
- 9. Drain the pasta and return it to the pot; add cream, salt, and pepper, and cook for 3-4 minutes until the sauce thickens.
- 10. Serve the meat and vegetable mixture over the pasta and sprinkle with parsley.
