Cajun Jambalaya Pasta

Ingredients

The proteins

  • ½ pound large shrimp, peeled and deveined
  • ¾ pound boneless skinless chicken breast, cut into 1 inch pieces
  • 2 links Aidells® Cajun Style Andouille Sausage, cut into ½ thick rounds

The vegetables

  • 1 small red onion, thinly sliced
  • 2 cups thinly sliced bell peppers (red, yellow, and green)

The pasta and sauce

  • 10 ounces linguine pasta
  • 1 cup heavy cream
  • 2 tablespoons chopped parsley

The seasonings

  • 2 tablespoons olive oil, divided use
  • 2 teaspoons Cajun seasoning or more to taste
  • salt to taste
  • pepper to taste

Instructions

  1. 1. Boil salted water in a large pot and cook the pasta according to package directions.
  2. 2. In a large pan, heat 1 tablespoon of olive oil over medium heat and sauté the onions and peppers for 4-6 minutes until softened; season with Cajun seasoning, salt, and pepper.
  3. 3. Remove the peppers and onions from the pan and keep warm.
  4. 4. Wipe the pan clean and heat the remaining olive oil over medium-high heat.
  5. 5. Add the chicken, season with salt, pepper, and Cajun seasoning, and cook for 5-6 minutes until cooked through.
  6. 6. Add the sausage and cook for an additional 3-4 minutes.
  7. 7. Add the shrimp and cook for 2-3 minutes until they are pink and opaque.
  8. 8. Return the reserved peppers and onions to the pan and mix well.
  9. 9. Drain the pasta and return it to the pot; add cream, salt, and pepper, and cook for 3-4 minutes until the sauce thickens.
  10. 10. Serve the meat and vegetable mixture over the pasta and sprinkle with parsley.
