Cajun Jambalaya Pasta

Ingredients

The pasta

  • ½ pound fettuccine

The meat

  • 1 pound chicken thighs, boneless and skinless
  • ½ pound medium shrimp, peeled and deveined
  • ½ pound kielbasa, sliced 1-inch thick

The vegetables

  • 1 medium onion, sliced
  • 2-3 medium tomatoes, diced
  • 1 medium red bell pepper, sliced
  • 2 tablespoons parsley, chopped

The seasoning and spices

  • 2 tablespoons olive or canola oil
  • 2 teaspoons garlic, minced
  • 1 tablespoon cornstarch
  • ½ teaspoon thyme
  • 1 teaspoon smoked paprika
  • 1 tablespoon Creole seasoning
  • 1 teaspoon Worcestershire sauce

The broth

  • 1½-2 cups chicken broth

Instructions

  1. Cook the fettuccine according to the package instructions.
  2. Season the chicken and shrimp with Creole spice, then heat oil in a pan.
  3. Sauté the shrimp for 3-5 minutes, then set aside.
  4. Add chicken and sausage to the pan, sauté until browned, then remove and set aside.
  5. Add onions, tomatoes, garlic, and cornstarch to the pan and stir for about a minute.
  6. Add thyme, paprika, and Creole spice, followed by bell peppers, chicken broth, sausage, chicken, and Worcestershire sauce.
  7. Bring to a boil, then lower heat and simmer for 7-10 minutes.
  8. Cook the pasta according to the package instructions.
  9. Toss the shrimp back into the sauce, adjust for salt and thickness, and serve over the cooked pasta.
