Ingredients

Mustard Vinaigrette

  • ¼ cup olive oil
  • 2 Tbsp red wine vinegar
  • Tbsp stone ground or whole grain mustard
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • to taste freshly cracked pepper

Kielbasa and Cabbage

  • 1 Tbsp olive oil
  • 14 oz kielbasa
  • 1 medium yellow onion
  • 6 cups chopped cabbage
  • to taste salt and pepper

Instructions

  1. Prepare the vinaigrette by mixing olive oil, vinegar, mustard, garlic powder, salt, and pepper in a bowl or jar.
  2. Slice the kielbasa and sauté in a large skillet with olive oil until browned.
  3. Dice the onion and add it to the skillet, cooking until soft.
  4. Chop the cabbage and add it to the skillet with salt and pepper, sautéing until tender, adding water to create steam if necessary.
  5. Drizzle half of the mustard vinaigrette over the skillet, stir to coat, and serve warm.
