Ingredients

The Pasta

  • 8 ounces pasta

The Kale

  • 3–4 cups shredded kale
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • to taste salt

The Sauce

  • 1 cup cashews (soaked)
  • ½ cup almond milk
  • 1 clove garlic
  • 1 teaspoon salt
  • ¼ cup olive oil
  • squeeze of lemon juice

Instructions

  1. Soak the cashews in water for about 2 hours, then drain and rinse them.
  2. Heat olive oil in a pan over medium-low heat, add garlic and kale, and sauté until soft.
  3. Blend all sauce ingredients in a food processor or blender until smooth.
  4. Cook the pasta according to package directions, reserving about 2 cups of pasta water.
  5. Combine the hot pasta with the sauce and kale, adding reserved pasta water as needed to coat the noodles.
