Basil Pesto Salad Dressing

Ingredients

  • ½ cup packed fresh basil leaves
  • 1 clove garlic
  • 3 tablespoons raw pine nuts
  • ½ cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt
  • to taste freshly ground pepper

Instructions

  1. Combine basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped.
  2. While blending, drizzle in olive oil, lemon juice, and salt.
  3. Blend until smooth, then season with pepper to taste.
  4. Serve immediately or store in the refrigerator for up to 3 days.
