Ingredients

  • ¼ cup coconut flour
  • teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground ginger
  • 3 large eggs
  • ½ cup freshly roasted pumpkin
  • ½ cup honey
  • 2 tablespoons palm shortening
  • teaspoon vanilla stevia

Instructions

  1. Preheat the oven to 350°F.
  2. In a food processor, combine coconut flour, salt, baking soda, cinnamon, and ginger.
  3. Pulse in the eggs, pumpkin, honey, shortening, and stevia until well mixed.
  4. Transfer the batter into a paper-lined muffin pan.
  5. Bake for 25 minutes.
  6. Serve the muffins.
