Ingredients

  • ¼ cup coconut flour
  • teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground ginger
  • 3 large eggs
  • ½ cup freshly roasted pumpkin
  • ½ cup honey
  • 2 tablespoons palm shortening
  • teaspoon vanilla stevia

Instructions

  1. 1. In a food processor, combine coconut flour, salt, baking soda, cinnamon, and ginger.
  2. 2. Pulse in the eggs, pumpkin, honey, shortening, and stevia until well mixed.
  3. 3. Transfer the batter into a paper-lined muffin pan.
  4. 4. Bake at 350°F for 25 minutes.
  5. 5. Serve warm.
