Ingredients

The salsa

  • 2 pieces peaches, peeled and chopped
  • 1 cup chopped mango
  • 2 tbsp shallots, diced
  • 2 tbsp cilantro, chopped
  • ½ piece jalapeno, diced
  • Juice of 1 lime
  • ½ tsp cumin
  • to taste salt and pepper

The bowls

  • 3 cups cooked black beans
  • cups shredded cooked chicken
  • cups cooked rice

Instructions

  1. Make the salsa by mixing peaches, mango, shallots, cilantro, jalapeno, lime juice, cumin, salt, and pepper in a large bowl.
  2. To assemble the bowls, start with a layer of rice (¾ cup) in each bowl.
  3. Top the rice with black beans, shredded chicken, and the prepared salsa.
  4. Serve warm.
