Vegan Cajun Chicken Pasta

Instructions
- Soak the cashews in hot water for 15 minutes.
- Cook the pasta until al dente, drain, rinse with cold water, and reserve ½ cup of cooking water.
- Mix the vegan sour cream and 1 tablespoon of Cajun seasoning in a bowl, then coat the vegan chicken with this mixture.
- Heat olive oil in a skillet and cook the chicken until browned, then set aside.
- In the same skillet, sauté the onion and garlic until softened.
- Add the diced tomatoes, tomato paste, and remaining Cajun seasoning, cooking for an additional 3 minutes.
- Blend the soaked cashews with 1½ cups of water, salt, and pepper until smooth.
- Pour the cashew cream into the skillet and cook until thickened, adjusting seasoning as needed.
- Stir in the pasta and vegan chicken, then serve with vegan Parmesan and parsley.
