Ingredients

The pasta

  • 8 ounces fettuccine

The sauce

  • ¾ cup cashews
  • 2 tablespoons vegan sour cream or unsweetened yogurt
  • 4 tablespoons Cajun seasoning
  • ¾ pound vegan chicken
  • 3 tablespoons olive oil
  • ½ onion chopped
  • 3 cloves garlic
  • ¾ cup diced tomatoes
  • 1 tablespoon tomato paste
  • cups water
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon salt
  • ½ cup vegan Parmesan
  • to taste chopped parsley

Instructions

  1. Soak the cashews in hot water for 15 minutes.
  2. Cook the pasta until al dente, drain, rinse with cold water, and reserve ½ cup of cooking water.
  3. Mix the vegan sour cream and 1 tablespoon of Cajun seasoning in a bowl, then coat the vegan chicken with this mixture.
  4. Heat olive oil in a skillet and cook the chicken until browned, then set aside.
  5. In the same skillet, sauté the onion and garlic until softened.
  6. Add the diced tomatoes, tomato paste, and remaining Cajun seasoning, cooking for an additional 3 minutes.
  7. Blend the soaked cashews with 1½ cups of water, salt, and pepper until smooth.
  8. Pour the cashew cream into the skillet and cook until thickened, adjusting seasoning as needed.
  9. Stir in the pasta and vegan chicken, then serve with vegan Parmesan and parsley.
