Ingredients

The pasta

  • 8 ounces penne pasta

The vegetables

  • 1 tablespoon extra-virgin olive oil
  • ½ red onion, chopped
  • 2 bell peppers
  • 4 ounces cremini mushrooms, chopped

The sauce

  • 1 can diced tomatoes with green chilies
  • ½ cup raw cashews
  • ¼ cup water
  • ½ teaspoon salt
  • 1 pinch pepper

Cajun spice blend

  • ½ teaspoon dried oregano
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 1 pinch cayenne pepper

Instructions

  1. 1. Boil salted water and cook the pasta according to package directions, then drain and set aside.
  2. 2. In a skillet, heat olive oil and sauté the onion, bell peppers, and mushrooms until softened.
  3. 3. In a bowl, mix the Cajun spice blend ingredients together.
  4. 4. For the sauce, blend the drained juices from the diced tomatoes with cashews, water, and salt until smooth.
  5. 5. Add the spice blend to the sautéed veggies and stir, then mix in the diced tomatoes, pasta, and creamy sauce.
  6. 6. Adjust seasoning to taste and serve warm, garnished with green onions or cilantro.
