Instructions
- 1. Boil salted water and cook the pasta according to package directions, then drain and set aside.
- 2. In a skillet, heat olive oil and sauté the onion, bell peppers, and mushrooms until softened.
- 3. In a bowl, mix the Cajun spice blend ingredients together.
- 4. For the sauce, blend the drained juices from the diced tomatoes with cashews, water, and salt until smooth.
- 5. Add the spice blend to the sautéed veggies and stir, then mix in the diced tomatoes, pasta, and creamy sauce.
- 6. Adjust seasoning to taste and serve warm, garnished with green onions or cilantro.
