Creamy Cajun Pasta

The Cajun spice mixture

Instructions
- Soak cashews in hot water.
- Cook pasta in salted boiling water according to package directions, reserving 2 cups of pasta water before draining.
- Whisk together the Cajun seasoning ingredients in a small bowl.
- In a skillet, heat olive oil and sauté onion, peppers, mushrooms, and Cajun seasoning for 8 minutes.
- Add garlic and cook for 1 more minute, then remove from heat.
- Drain the cashews and blend them with fire-roasted tomatoes and ½ cup of reserved pasta water until smooth.
- Pour the cream sauce over the sautéed vegetables and stir in 1 more cup of reserved pasta water.
- Combine the sauce with the pasta, add parsley, season to taste, and serve hot.
