Instructions
- Boil the whole potatoes in a large pot of water until fork tender, about 10 minutes, then drain.
- Preheat the oven to 400ºF.
- In a bowl, combine the par-boiled potatoes with rosemary, thyme, garlic, olive oil, salt, and pepper, and toss to coat.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Roast the potatoes for 20 minutes, turning them halfway through for even cooking.
