Crispy Garlic Herb Roasted Potatoes

Ingredients

The potatoes

  • 1.5 lb. mini yellow potatoes

The seasoning

  • 3 cloves garlic
  • 2 T. fresh thyme
  • 2 T. fresh rosemary
  • 3 T. olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Boil the whole potatoes in a large pot of water until fork tender, about 10 minutes, then drain.
  2. Preheat the oven to 400ºF.
  3. In a bowl, combine the par-boiled potatoes with rosemary, thyme, garlic, olive oil, salt, and pepper, and toss to coat.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Roast the potatoes for 20 minutes, turning them halfway through for even cooking.
