Vegan No-Bake Brownies

Ingredients

The brownies

  • ½ cup almond butter
  • ½ cup coconut oil
  • 3 Tbsp. maple syrup
  • ¾ cup raw cacao or baking cocoa
  • 1 pinch sea salt
  • Tbsp. coconut flour
  • ¼ cup raw walnuts, roughly chopped

Optional chocolate drizzle

  • ¼ cup chocolate chips
  • ¼ tsp. coconut oil

Instructions

  1. Blend almond butter, coconut oil, maple syrup, salt, and cacao powder in a food processor until well combined.
  2. Add coconut flour to the mixture and process until a dough forms.
  3. Transfer the dough to a bowl and mix in the chopped walnuts.
  4. Press the dough into an 8x8-inch pan lined with parchment paper.
  5. Refrigerate for at least 30 minutes to set.
  6. Cut into 16 squares.
  7. For the optional drizzle, melt chocolate chips and coconut oil in a saucepan, then drizzle over the brownies.
  8. Store in the fridge for up to a week or freeze for longer storage.
