Ingredients

The filling

  • ½ pound shrimp, peeled and deveined
  • ½ red bell pepper chopped
  • 3 cloves garlic, chopped
  • 2 oz reduced-fat cream cheese
  • 1 tbsp butter
  • ½ cup mozzarella cheese
  • ½ cup Pepperjack cheese
  • to taste salt and pepper
  • ½ lemon juice of

The wrappers

  • 8 Goya empanada wrappers

The seasoning

  • to taste McCormick's Grill Mates Montreal Chicken Seasoning

Instructions

  1. Preheat the oven to 425 degrees.
  2. Heat a skillet on medium-high heat and add garlic and red peppers, cooking until fragrant.
  3. Add shrimp to the skillet and season with Montreal Chicken Seasoning, cooking until shrimp turns bright pink.
  4. Drizzle lemon juice over the shrimp mixture, then add cream cheese and half of the mozzarella and Pepperjack cheese, stirring until melted.
  5. Lay empanada wrappers on a flat surface and brush the edges with water to soften.
  6. Fill each empanada with the shrimp mixture and sprinkle remaining cheese on top.
  7. Close the empanadas by pinching the edges and rolling the sides inward.
  8. Place empanadas on a parchment-lined baking sheet and bake for 20 minutes or until golden brown.
  9. Remove from oven and brush melted butter over the top before allowing to cool.
