Cajun Shrimp Dip

Ingredients

  • 1 lb raw shrimp peeled and deveined
  • 1 tablespoon butter
  • ½ cup red and/or green bell pepper finely diced
  • 1 teaspoon minced garlic
  • teaspoons Cajun seasoning
  • to taste salt and pepper
  • 8 ounces cream cheese softened
  • ½ cup sour cream
  • 1 teaspoon lemon juice
  • cup parmesan cheese finely grated
  • cups shredded mozzarella cheese divided
  • 2 tablespoons green onions sliced
  • to taste diced red and green bell pepper for garnish
  • as needed cooking spray

Instructions

  1. Preheat the oven to 400°F and coat a baking dish with cooking spray.
  2. Set aside 3 whole shrimp with tails for garnish and chop the remaining shrimp into ½ inch pieces.
  3. Heat butter in a large pan over medium heat and add the shrimp, cooking for 2 minutes.
  4. Add bell peppers, garlic, and Cajun seasoning, cooking until shrimp are pink and opaque.
  5. Remove the whole shrimp from the pan and set aside.
  6. In a bowl, combine the shrimp mixture with cream cheese, sour cream, lemon juice, parmesan cheese, and ¾ cup mozzarella cheese, stirring gently.
  7. Spread the mixture into the prepared pan and top with the remaining mozzarella cheese.
  8. Bake for 15-20 minutes until golden brown and bubbling.
  9. Garnish with reserved shrimp, peppers, and green onions before serving.
