Cajun Shrimp Dip

Instructions
- Preheat the oven to 400°F and coat a baking dish with cooking spray.
- Set aside 3 whole shrimp with tails for garnish and chop the remaining shrimp into ½ inch pieces.
- Heat butter in a large pan over medium heat and add the shrimp, cooking for 2 minutes.
- Add bell peppers, garlic, and Cajun seasoning, cooking until shrimp are pink and opaque.
- Remove the whole shrimp from the pan and set aside.
- In a bowl, combine the shrimp mixture with cream cheese, sour cream, lemon juice, parmesan cheese, and ¾ cup mozzarella cheese, stirring gently.
- Spread the mixture into the prepared pan and top with the remaining mozzarella cheese.
- Bake for 15-20 minutes until golden brown and bubbling.
- Garnish with reserved shrimp, peppers, and green onions before serving.
