Ingredients

The Muffins

  • 1 large egg
  • 1 cup canned pumpkin puree
  • ¼ cup granulated white sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons light butter, melted
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

The Cream Cheese Swirl

  • 4 oz 1/3 less fat cream cheese, softened
  • 1 egg yolk egg yolk
  • 2 tablespoons granulated white sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with cooking spray.
  2. In a large bowl, mix together the egg, pumpkin, sugar, and vanilla until well combined.
  3. Stir in the melted butter.
  4. In another bowl, whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt.
  5. Combine the dry ingredients with the wet ingredients until a batter forms.
  6. Spoon the batter into the muffin tin.
  7. In a separate bowl, mix the cream cheese swirl ingredients until smooth.
  8. Add a dollop of the cream cheese mixture on top of each muffin batter and swirl with a toothpick.
  9. Bake in the oven for 18-20 minutes.
