Instructions
- Preheat the oven to 350°F and prepare muffin tins with paper cups or cooking spray.
- In a stand mixer, combine cream cheese, egg, sugar, pumpkin puree, and flour, then beat until light and fluffy.
- Stir in chocolate chips and set the filling aside.
- In a separate bowl, mix flour, sugar, cocoa, baking soda, and salt.
- Create a well in the dry ingredients and add milk, oil, vinegar, and vanilla, then stir until blended.
- Fill muffin tins ⅔ full with batter, top with 2 tablespoons of the cream cheese mixture, and sprinkle chocolate chips on top.
- Bake for 25 to 30 minutes, or until a toothpick inserted comes out clean.
