Ingredients

Filling

  • 1 package cream cheese

Muffin

  • cups all-purpose flour
  • 1 cup white sugar
  • cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup milk
  • cup vegetable oil
  • 1 tablespoon cider vinegar
  • 1 teaspoon vanilla extract
  • ½ cup miniature semisweet chocolate chips
  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 350°F and prepare muffin tins with paper cups or cooking spray.
  2. In a stand mixer, combine cream cheese, egg, sugar, pumpkin puree, and flour, then beat until light and fluffy.
  3. Stir in chocolate chips and set the filling aside.
  4. In a separate bowl, mix flour, sugar, cocoa, baking soda, and salt.
  5. Create a well in the dry ingredients and add milk, oil, vinegar, and vanilla, then stir until blended.
  6. Fill muffin tins ⅔ full with batter, top with 2 tablespoons of the cream cheese mixture, and sprinkle chocolate chips on top.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted comes out clean.
