Instructions
- Preheat the oven to 425°F.
- Cut the sweet potatoes into fries and place them on two baking sheets.
- Drizzle olive oil over the fries and toss to coat them evenly.
- Spread the fries out so they are not touching and season with salt and pepper.
- Bake the fries for about 35 minutes, turning once, until tender and crisp.
- While the fries are baking, prepare the dipping sauce by draining the soaked cashews.
- Blend the cashews with garlic, cilantro, lime juice, salt, and Sriracha until creamy.
- Slowly add the almond milk while blending to reach the desired consistency.
- Serve the warm sweet potato fries with the spicy cashew sauce.
