Ingredients

Baked Spicy Chicken

  • ½ cup breadcrumbs
  • ¼ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp cayenne
  • tsp salt
  • to taste freshly cracked pepper
  • Tbsp cooking oil
  • ¼ cup plain yogurt
  • tsp salt
  • 1 tsp hot sauce
  • 1 piece boneless, skinless chicken breast (about 2/3 lb.)

Honey Yogurt Slaw

  • 3 cups shredded cabbage slaw mix (pre-bagged)
  • 2 Tbsp mayonnaise
  • cup plain whole milk yogurt
  • ½ Tbsp honey
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • ¼ tsp salt
  • to taste freshly cracked pepper

For Serving

  • 2 buns

Instructions

  1. Preheat the oven to 425ºF and prepare a wire cooling rack over a baking sheet.
  2. Combine breadcrumbs, garlic powder, smoked paprika, cayenne, salt, and pepper in a bowl, then mix in cooking oil until it resembles damp sand.
  3. In another bowl, mix yogurt, salt, and hot sauce.
  4. Pound the chicken breast to an even thickness, season with salt and cayenne, then cut in half.
  5. Dip chicken in the yogurt mixture, then coat with the breadcrumb mixture, and place on the prepared baking sheet.
  6. Bake for 25 minutes, flipping halfway through, until the internal temperature reaches 165ºF.
  7. While the chicken bakes, prepare the slaw by mixing mayonnaise, yogurt, honey, Dijon, vinegar, salt, and pepper in a small bowl.
  8. Combine the dressing with the shredded cabbage in a large bowl and stir until coated.
  9. Assemble the sandwiches by placing chicken on buns and topping with honey yogurt slaw.
