Instructions
- Preheat the oven to 425ºF and prepare a wire cooling rack over a baking sheet.
- Combine breadcrumbs, garlic powder, smoked paprika, cayenne, salt, and pepper in a bowl, then mix in cooking oil until it resembles damp sand.
- In another bowl, mix yogurt, salt, and hot sauce.
- Pound the chicken breast to an even thickness, season with salt and cayenne, then cut in half.
- Dip chicken in the yogurt mixture, then coat with the breadcrumb mixture, and place on the prepared baking sheet.
- Bake for 25 minutes, flipping halfway through, until the internal temperature reaches 165ºF.
- While the chicken bakes, prepare the slaw by mixing mayonnaise, yogurt, honey, Dijon, vinegar, salt, and pepper in a small bowl.
- Combine the dressing with the shredded cabbage in a large bowl and stir until coated.
- Assemble the sandwiches by placing chicken on buns and topping with honey yogurt slaw.
