Instructions
- Pat the chicken dry and combine the spices in a bowl.
- Sprinkle the spice mixture over the chicken, rubbing it in thoroughly.
- Preheat the oven to 425°F.
- Heat a cast iron or stainless-steel skillet on medium-high heat and add the butter.
- Once the butter has melted, add the chicken to the pan and avoid overcrowding.
- Cook the chicken for 3-4 minutes on each side until charred.
- Transfer the chicken to the oven and bake for 10-15 minutes until it reaches an internal temperature of 165°F.
- Allow the chicken to rest for 5-10 minutes.
- Load the chicken onto the brioche buns with pickles and spicy mayo.
