Ingredients

The Chicken

  • pounds skinless chicken breasts or thighs
  • 1 tablespoon unsalted butter or olive oil

The Spice Blend

  • ½ tablespoon smoked paprika
  • 1 teaspoon cayenne pepper
  • ½ teaspoon oregano
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • to taste salt
  • ½ teaspoon black pepper
  • ¼ teaspoon thyme

Instructions

  1. Pat the chicken dry and rub the spice blend all over the chicken.
  2. Preheat the oven to 425°F.
  3. Heat a cast iron or stainless-steel skillet over medium-high heat and add butter.
  4. Once the butter is melted, add the chicken to the pan, cooking in batches if necessary.
  5. Cook the chicken for 3-4 minutes on each side until charred.
  6. Transfer the chicken to the oven and bake for 10-15 minutes until the internal temperature reaches 165°F.
  7. Let the chicken rest for 5-10 minutes before slicing.
