Ingredients

The seasoning

  • 1 tablespoon smoked paprika
  • 2 teaspoons sweet paprika
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • ¼ teaspoon cayenne pepper

The chicken

  • 4 pieces boneless skinless chicken breasts (about 1 ¼ lbs)
  • 3 tablespoons butter (melted)
  • 1 tablespoon vegetable oil
  • 1 tablespoon parsley (chopped)

Instructions

  1. Combine all the seasoning ingredients in a small bowl and mix well.
  2. Preheat the oven to 425°F.
  3. Brush melted butter over both sides of the chicken and coat with the seasoning mix, pressing it into the meat.
  4. Heat a cast iron skillet over high heat and brush with vegetable oil.
  5. Sear the chicken in the skillet for 1-2 minutes on each side until a dark crust forms.
  6. Transfer the skillet to the oven and bake for 15-18 minutes until the chicken is cooked through.
  7. Remove from the oven and let the chicken rest for 5 minutes before serving, garnished with parsley.
