Ingredients

The spice mix

  • 1 tablespoon all purpose flour
  • 1 ½ teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ¾ teaspoon dried oregano
  • ½ teaspoon ground thyme
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ground cayenne pepper

The chicken

  • 1 ½ lbs raw boneless skinless chicken breasts, cut into small bite-sized pieces

The cooking oil

  • 1 ½ tablespoons olive oil

Instructions

  1. Combine the flour and spices in a small dish to create a Cajun spice mix.
  2. Place the chicken pieces in a zip-seal bag with the spice mix, seal, and shake to coat the chicken.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the chicken to the skillet, cooking in batches if necessary, and stir to coat in oil.
  5. Cook the chicken for 8-10 minutes, stirring occasionally to allow browning.
  6. Once cooked through and browned, remove from heat and serve.
