Ingredients

Vegetables and Pickling

  • 3 medium carrots
  • 1 English hothouse cucumber
  • 6 red radishes
  • 1 large jalapeño
  • cup unseasoned rice vinegar
  • 1 tsp kosher salt
  • 1 tsp sugar

Pork Patties

  • 2 lb ground pork
  • 1 large shallot
  • 6 cloves garlic
  • 2 Tbsp fish sauce
  • 2 Tbsp soy sauce
  • tsp Chinese five-spice powder
  • 1 tsp kosher salt
  • 1 Tbsp sugar

Buns and Condiments

  • 8 rolls kaiser or ciabatta
  • as needed mayonnaise
  • as needed cilantro leaves with tender stems

Miscellaneous

  • as needed vegetable oil (for grill)

Instructions

  1. Prepare the grill for medium-high heat and oil the grate.
  2. In a medium bowl, combine the carrots and cucumber with salt and let sit to release liquid.
  3. After 15 minutes, pour off excess liquid and add radishes, jalapeño, rice vinegar, and sugar; toss to combine.
  4. In a large bowl, mix ground pork, shallot, garlic, fish sauce, soy sauce, five-spice powder, salt, and sugar, then form into 8 patties.
  5. Grill the patties for 6-8 minutes, flipping halfway through until cooked through.
  6. Spread mayonnaise on the rolls and assemble the sandwiches with patties, pickled vegetables, and cilantro.
