Instructions
- Marinate the pork by mixing soy sauce, fish sauce, brown sugar, lemongrass, garlic, sesame oil, vegetable oil, salt, and pepper in a bowl, then add the pork and coat well. Refrigerate for at least 30 minutes.
- Prepare the pickled vegetables by combining rice vinegar, sugar, water, and salt in a bowl. Add the carrots and daikon radish, tossing to coat and letting them sit for at least 10 minutes.
- Grill the marinated pork on medium-high heat for 3-4 minutes per side until cooked through. Alternatively, cook in a pan on the stove.
- Spread mayonnaise on the bottom halves of the bread. Layer the grilled pork, pickled vegetables, cucumbers, cilantro, and chilies on top.
- Close the sandwiches with the top halves of the bread and serve immediately.
