Ingredients

The pork

  • 1 lb pork tenderloin, thinly sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons lemongrass, minced
  • 1 teaspoon minced garlic
  • 2 teaspoons sesame oil
  • 1 tablespoon vegetable oil
  • to taste salt and pepper

The pickled vegetables

  • ¾ cup daikon radish, shredded or julienned
  • ¾ cup carrot, peeled and shredded or julienned
  • ¼ cup rice vinegar
  • 1 tablespoon granulated sugar
  • 1 tablespoon water
  • to taste salt

The sandwiches

  • 4 pieces French rolls or 1 baguette
  • ¼ cup mayonnaise
  • ¼ cup cilantro leaves
  • ½ cup cucumbers, thinly sliced
  • 2 tablespoons thinly sliced chilies (optional)

Instructions

  1. Marinate the pork by mixing soy sauce, fish sauce, brown sugar, lemongrass, garlic, sesame oil, vegetable oil, salt, and pepper in a bowl, then add the pork and coat well. Refrigerate for at least 30 minutes.
  2. Prepare the pickled vegetables by combining rice vinegar, sugar, water, and salt in a bowl. Add the carrots and daikon radish, tossing to coat and letting them sit for at least 10 minutes.
  3. Grill the marinated pork on medium-high heat for 3-4 minutes per side until cooked through. Alternatively, cook in a pan on the stove.
  4. Spread mayonnaise on the bottom halves of the bread. Layer the grilled pork, pickled vegetables, cucumbers, cilantro, and chilies on top.
  5. Close the sandwiches with the top halves of the bread and serve immediately.
