Ingredients

  • 2 cups almond flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 large eggs
  • cup almond butter
  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • 1 cup grated zucchini
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare an 8×8 pan with parchment paper and nonstick spray.
  2. In a small bowl, mix together the almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, whisk the eggs with almond butter, coconut oil, maple syrup, and vanilla.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Fold in the grated zucchini and chocolate chips.
  6. Pour the mixture into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool for at least 15 minutes before cutting into squares.
  8. Store on the counter or in the fridge.
