Instructions
- Heat oil in the Instant Pot and sauté onion, carrots, and celery until soft.
- Add garlic, split peas, ham, salt, black pepper, and stock, then place thyme and bay leaves on top.
- Secure the lid and set to high pressure for 12 minutes.
- Release steam, remove the lid, and discard bay leaves and thyme.
- Stir in cream, lemon zest, lemon juice, and cayenne, then taste and adjust seasoning.
