Ingredients

The noodles

  • 2 pieces seedless English cucumbers

The toppings

  • 1 cup grape tomatoes, halved
  • cup pitted kalamata olives, chopped
  • ¼ of a small red onion, thinly sliced
  • 4 tablespoons Sabra Classic Hummus
  • ½ cup crumbled Feta cheese
  • to taste Salt and black pepper

Instructions

  1. Spiralize the cucumbers to make noodles using an Inspiralizer, mandoline, or julienne peeler.
  2. Divide the cucumber noodles onto plates.
  3. Top the noodles with tomatoes, olives, and red onion.
  4. Add a spoonful of hummus in the center of the noodles.
  5. Sprinkle feta cheese over the noodles.
  6. Season with salt and black pepper to taste.
  7. Serve immediately.
