Instructions
- Spiralize the cucumbers to make noodles using an Inspiralizer, mandoline, or julienne peeler.
- Divide the cucumber noodles onto plates.
- Top the noodles with tomatoes, olives, and red onion.
- Add a spoonful of hummus in the center of the noodles.
- Sprinkle feta cheese over the noodles.
- Season with salt and black pepper to taste.
- Serve immediately.
