Instructions
- Spiralize the cucumber and cut the strands into smaller pieces.
- In a large bowl, combine the cucumber, bell pepper, tomatoes, olives, and red onion.
- Squeeze half of the lemon over the salad and drizzle with half of the olive oil.
- Toss the salad with fresh oregano, salt, and pepper.
- Serve on a plate topped with a slice of feta and drizzle with remaining olive oil.
