Salsa Chicken Casserole

Ingredients

  • 1 cup uncooked long grain white rice
  • 1 cup frozen corn kernels, thawed
  • 1 15oz can black beans
  • 1 16oz jar salsa
  • 1 cup chicken broth
  • ½ Tbsp chili powder
  • ½ tsp dried oregano
  • 2 pieces chicken breasts (about 1.5 lbs. total)
  • 1 cup shredded cheddar cheese
  • 2 pieces green onions, sliced

Instructions

  1. Preheat the oven to 375°F.
  2. Drain and rinse the black beans, then combine the rice, black beans, corn, salsa, chicken broth, chili powder, and oregano in an 8×8 inch casserole dish.
  3. Cut the chicken breasts into three pieces each and push them into the rice mixture.
  4. Cover the dish tightly with foil and bake for one hour.
  5. Check the rice for tenderness; if not tender, cover and bake for an additional 10-15 minutes.
  6. Once the rice is tender, sprinkle cheese on top and return to the oven until melted.
  7. Add sliced green onions on top and serve hot.
