Bruschetta Chicken

Ingredients

Bruschetta

  • 4 units Roma tomatoes, seeded and diced
  • 3 cloves garlic, minced
  • 3 Tbsp olive oil
  • 2 tsp balsamic vinegar
  • 2 Tbsp fresh basil, chopped
  • 1 tsp salt
  • ΒΌ tsp fresh cracked pepper

Chicken

  • 4 medium boneless skinless chicken breasts, uniformly sized
  • 1 Tbsp salt and pepper
  • 2 Tbsp avocado or refined coconut oil

Instructions

  1. 1. Mix all bruschetta ingredients in a bowl and set aside.
  2. 2. Heat oil in a skillet over medium heat.
  3. 3. Season chicken breasts with salt and pepper, then add to the skillet without overcrowding.
  4. 4. Cook the first side for 8 minutes without moving, then flip and cook the other side for 2-4 minutes until cooked through.
  5. 5. Remove chicken from the skillet and let rest for 5 minutes.
  6. 6. Serve chicken topped with the bruschetta mixture.
