Ingredients

The base

  • 1 cup Quinoa, cooked according to package instructions
  • 4 cups Kale

The toppings

  • 1 cup Strawberries, sliced
  • cup Toasted Slivered Almonds

The dressing

  • 4 tbsp Lemon Juice
  • cup Extra Virgin Olive Oil
  • 1 pinch Sea salt

Instructions

  1. Prepare the quinoa according to package instructions.
  2. Slice the strawberries and remove the stems from the kale, then massage the kale leaves for about 1 minute.
  3. Toast the almonds in a dry skillet over medium heat until golden brown, watching them closely.
  4. Arrange the kale, strawberries, cooked quinoa, and almonds in a bowl.
  5. In a mason jar, combine lemon juice, olive oil, and sea salt, then shake to mix.
  6. Drizzle the dressing over the bowl and toss everything together, reserving any extra dressing in the fridge.
