Ingredients

The meatballs

  • 1 pound lean ground sirloin
  • ¾ cup bread crumbs
  • ¼ cup grated parmesan cheese
  • ¼ cup chopped parsley
  • 1 teaspoon dried oregano
  • a pinch crushed red pepper flakes
  • to taste kosher salt and pepper
  • 2 tablespoons olive oil
  • 1 large egg

The sauce and pasta

  • 1 jar marinara sauce
  • cup shredded mozzarella
  • to serve whole wheat pasta or spaghetti squash

Instructions

  1. Preheat the oven to 450°F and grease a 9x13 inch baking dish with olive oil.
  2. In a mixing bowl, combine the ground sirloin, bread crumbs, parmesan cheese, parsley, oregano, crushed red pepper, salt, pepper, olive oil, and egg until just mixed.
  3. Coat your hands with olive oil and roll the mixture into 2-tablespoon size balls, making about 10-12 meatballs.
  4. Place the meatballs in the baking dish and bake for 15 minutes until crisp on the outside but not fully cooked inside.
  5. Add mozzarella cheese to the meatballs and continue baking for another 15-20 minutes until cooked through.
  6. For a giant meatball, shape the mixture into an oval and bake for 35-45 minutes, adding cheese in the last 10 minutes.
  7. Serve the meatballs with pasta and marinara sauce.
