Ingredients

The cutlets

  • 2 pounds pork cutlets
  • ¼ cup all-purpose flour
  • ¼ cup vegetable oil
  • Salt to taste salt
  • ½ teaspoon black pepper

The sauce and garnish

  • 2 large apples
  • ¼ cup apple juice
  • ½ cup heavy cream
  • pinch ground nutmeg
  • 2 tablespoons fresh chives

Instructions

  1. 1. Season the pork cutlets with salt and pepper, then dredge in flour.
  2. 2. Heat oil in a large skillet over medium-high heat until shimmering.
  3. 3. Cook the pork cutlets in a single layer until golden brown on one side, about 4 to 5 minutes.
  4. 4. Flip the cutlets and cook until browned and cooked through, about 8 to 10 minutes total.
  5. 5. Transfer the cooked cutlets to a plate and keep warm.
  6. 6. Add sliced apples to the skillet and sauté until softened, about 4 to 5 minutes.
  7. 7. Pour in apple juice and cook until mostly evaporated, about 3 to 4 minutes.
  8. 8. Stir in cream and nutmeg, simmering until thickened, about 2 to 3 minutes.
  9. 9. Return the pork cutlets to the skillet, stirring until heated through and coated with sauce.
  10. 10. Garnish with chives before serving.
