Ingredients

The pork chops

  • 4 pieces boneless pork chops
  • ½ cup low-sodium chicken broth
  • ½ cup apple cider
  • teaspoons dijon mustard
  • ½ teaspoon ground cinnamon
  • teaspoon ground allspice
  • to taste salt
  • to taste black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter

The toppings

  • 2 medium sweet crisp apples
  • 1 small red onion
  • teaspoons minced fresh sage
  • teaspoons minced fresh rosemary

Instructions

  1. Let the pork chops rest at room temperature for 10 minutes.
  2. Whisk together the chicken broth, apple cider, dijon mustard, cinnamon, and allspice in a bowl.
  3. Season the pork chops with salt and pepper.
  4. Heat olive oil in a skillet over medium-high heat and sear the pork chops for 4-5 minutes on each side until browned.
  5. Transfer the pork chops to a plate and cover with foil to keep warm.
  6. In the same skillet, melt butter and sauté the sliced apples, onions, sage, and rosemary until tender, about 4 minutes.
  7. Pour in the broth mixture and let it simmer until reduced by half, about 2-3 minutes.
  8. Return the pork chops to the skillet and spoon the mixture over them before serving.
