Ingredients

The pork chops

  • 2 lb. bone-in pork rib chops
  • 1 tsp. Diamond Crystal kosher salt
  • ½ tsp. Morton kosher salt
  • to taste freshly ground pepper
  • 2 Tbsp. extra-virgin olive oil

The topping

  • 2 cans diced green chiles
  • cup sherry vinegar or red wine vinegar
  • 1 Tbsp. sugar
  • 4 Tbsp. unsalted butter
  • 3 medium Honeycrisp apples

Instructions

  1. Pat the pork chops dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook the pork chops until browned on both sides and cooked through.
  3. Remove the pork chops and add the diced green chiles to the skillet, cooking until darkened.
  4. Add vinegar, sugar, and salt to the skillet, stirring until reduced, then add water and butter, cooking until melted.
  5. Stir in the apple pieces and remove from heat.
  6. Arrange the pork on a platter, drizzle with juices, and top with the apple and green chile mixture.
