Bacon Wrapped Pork Chops With Apple Cider Vinegar Glaze

Instructions
- Trim the fat off the pork chops and wrap each with a slice of bacon, securing with a toothpick.
- Rub oil over both sides of the pork chops and season with salt and pepper.
- Finely dice the onions and mince the garlic.
- Heat a pan over medium heat and add the remaining oil.
- Brown the bacon by cooking the pork chops on edge for 1 minute per side.
- Cook the pork chops flat for 3-5 minutes per side, then remove and cover with foil.
- Sauté the onions and garlic in the same pan for 1-2 minutes until translucent.
- Add the chicken base and thyme, then stir in the water and vinegar, scraping the pan.
- Reduce the sauce by half, then add the accumulated juices from the pork.
- Remove the thyme, add butter, and stir until incorporated.
- Adjust seasoning and spoon the sauce over the pork before serving.
