Ingredients

The pork chops

  • 1 ¼ pounds boneless pork chops (about 1-inch thick each)
  • 4 slices bacon (not thick cut)
  • 1 tablespoon olive oil, divided
  • to taste salt
  • to taste pepper

The glaze

  • ¼ cup onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chicken base
  • ¼ cup apple cider vinegar
  • ½ cup water
  • 3 sprigs fresh thyme (optional)
  • 2 tablespoons butter
  • 1-2 teaspoons low carb sugar (optional)

Instructions

  1. Trim the fat off the pork chops and wrap each with a slice of bacon, securing with a toothpick.
  2. Rub oil over both sides of the pork chops and season with salt and pepper.
  3. Finely dice the onions and mince the garlic.
  4. Heat a pan over medium heat and add the remaining oil.
  5. Brown the bacon by cooking the pork chops on edge for 1 minute per side.
  6. Cook the pork chops flat for 3-5 minutes per side, then remove and cover with foil.
  7. Sauté the onions and garlic in the same pan for 1-2 minutes until translucent.
  8. Add the chicken base and thyme, then stir in the water and vinegar, scraping the pan.
  9. Reduce the sauce by half, then add the accumulated juices from the pork.
  10. Remove the thyme, add butter, and stir until incorporated.
  11. Adjust seasoning and spoon the sauce over the pork before serving.
