Ingredients

The pork chops

  • 1 tablespoon apple cider vinegar
  • ½ cup whole grain mustard
  • 1 teaspoon ground mustard
  • to taste salt & pepper
  • 2 tablespoons grapeseed oil
  • 4 pieces boneless pork chops

The glazed apples

  • 2 tablespoons butter
  • 2 pieces granny smith apples, peeled and thinly sliced
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • a pinch salt
  • 3 tablespoons bourbon

Instructions

  1. Mix whole grain mustard, ground mustard, apple cider vinegar, salt, and pepper in a small bowl.
  2. Pat dry the pork chops and rub the mustard mixture on both sides. Cover and refrigerate for 10-15 minutes.
  3. Preheat the oven to 350°F.
  4. Heat a large oven-safe skillet over medium-high heat, add grapeseed oil, and sear the pork chops for 2 minutes on each side.
  5. Transfer the skillet to the oven and cook for 15 minutes until the internal temperature reaches 150°F.
  6. Remove from the oven and let the pork chops sit.
  7. In a medium skillet, melt butter and add the sliced apples, sautéing for 5-7 minutes until tender.
  8. Stir in ground cinnamon, ground allspice, and a pinch of salt, cooking for another minute.
  9. Add bourbon and cook for 1-2 minutes until the liquid has evaporated and soaked into the apples.
  10. Serve the pork chops topped with the bourbon glazed apples.
