Mustard Crusted Pork Chops with Bourbon Glazed Apples

Instructions
- Mix whole grain mustard, ground mustard, apple cider vinegar, salt, and pepper in a small bowl.
- Pat dry the pork chops and rub the mustard mixture on both sides. Cover and refrigerate for 10-15 minutes.
- Preheat the oven to 350°F.
- Heat a large oven-safe skillet over medium-high heat, add grapeseed oil, and sear the pork chops for 2 minutes on each side.
- Transfer the skillet to the oven and cook for 15 minutes until the internal temperature reaches 150°F.
- Remove from the oven and let the pork chops sit.
- In a medium skillet, melt butter and add the sliced apples, sautéing for 5-7 minutes until tender.
- Stir in ground cinnamon, ground allspice, and a pinch of salt, cooking for another minute.
- Add bourbon and cook for 1-2 minutes until the liquid has evaporated and soaked into the apples.
- Serve the pork chops topped with the bourbon glazed apples.
