Instructions
- Season the pork chops with sea salt and black pepper.
- Heat a sauté pan over medium heat and add olive oil.
- Sauté the pork chops for 2-3 minutes per side until well seared.
- Remove the pork chops from the pan and keep warm.
- Add bacon to the pan and sauté for one minute, then add onions and brown sugar.
- Continue to sauté until the bacon is cooked.
- Add bourbon to the pan and allow the alcohol to cook off.
- Stir in tomato paste, apple butter, and chicken stock, then reduce heat to a simmer.
- In another pan, heat olive oil and add the potatoes, seasoning with salt and pepper.
- Sauté the potatoes for 2-3 minutes, then add collard greens.
- Stir the mixture until the greens wilt, then cover and simmer for 20 minutes, adding stock or water as needed.
