Ingredients

The pork chops and sauce

  • 4 pieces thick sliced bacon
  • 1 small onion
  • 4 pieces center cut pork chops
  • to taste sea salt
  • to taste black pepper
  • cup apple butter
  • 1 ounce bourbon
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 1 cup chicken stock or water
  • 1 tablespoon olive oil

The sides

  • 4 cups chopped collard greens
  • 2 cups baby potatoes
  • 1 tablespoon olive oil
  • 1 cup chicken stock or water
  • to taste sea salt
  • to taste black pepper

Instructions

  1. Season the pork chops with sea salt and black pepper.
  2. Heat a sauté pan over medium heat and add olive oil.
  3. Sauté the pork chops for 2-3 minutes per side until well seared.
  4. Remove the pork chops from the pan and keep warm.
  5. Add bacon to the pan and sauté for one minute, then add onions and brown sugar.
  6. Continue to sauté until the bacon is cooked.
  7. Add bourbon to the pan and allow the alcohol to cook off.
  8. Stir in tomato paste, apple butter, and chicken stock, then reduce heat to a simmer.
  9. In another pan, heat olive oil and add the potatoes, seasoning with salt and pepper.
  10. Sauté the potatoes for 2-3 minutes, then add collard greens.
  11. Stir the mixture until the greens wilt, then cover and simmer for 20 minutes, adding stock or water as needed.
