Instructions
- Pat the pork chops dry and season with salt and pepper.
- Heat olive oil in a cast iron skillet until very hot. Sear the pork chops for 3-4 minutes on each side until golden brown, then remove from the pan.
- Lower the heat to medium, add butter to the pan, and sauté the garlic until fragrant.
- Add the sugar-free honey, chicken broth, and vinegar to the pan. Whisk and cook until the sauce thickens slightly.
- Return the pork chops to the pan and baste with the sauce, cooking until they reach an internal temperature of 140°F.
- Transfer the chops to a plate, spoon the sauce over them, and let rest for 5 minutes before serving.
