Ingredients

The pork chops

  • 4 6-oz Pork chops (boneless or bone-in; 1 inch thick; preferably at room temperature)

The seasonings

  • 1 tsp Garlic powder
  • 1 tsp Sea salt
  • ½ tsp Black pepper
  • ¼ tsp Cayenne pepper (optional)

The cooking fats

  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter

The sauce

  • 2 cloves Garlic (minced)
  • 3 tbsp Honey
  • 3 tbsp Coconut aminos (or low-sodium soy sauce)
  • 1 tbsp Apple cider vinegar

The garnish

  • to taste Green onions (sliced; optional, for garnish)

Instructions

  1. Pat the pork chops dry and season both sides with garlic powder, cayenne pepper, sea salt, and black pepper.
  2. Heat olive oil in a cast iron skillet over medium-high heat until shimmering, then sear the pork chops for 2 minutes on each side until golden brown.
  3. Remove the pork chops from the pan and reduce the heat to medium.
  4. Melt the butter in the pan and sauté the minced garlic until fragrant.
  5. Add honey, coconut aminos, and apple cider vinegar to the pan, whisk together, and cook until the sauce starts to thicken.
  6. Return the pork chops to the pan, baste them in the sauce, and cook until they reach an internal temperature of 140°F, then let them rest before serving.
