Ingredients

The pork chops and marinade

  • 4 pieces boneless pork loin chops (about 6–8 ounces each and ¾- to 1-inch thickness)
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons pure honey
  • 2 tablespoons avocado oil or olive oil
  • 2 tablespoons coconut aminos
  • 3 cloves garlic (pressed or minced)
  • 2 teaspoons Dijon mustard
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper

The Honey Mustard Sauce

  • 3 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon pure honey
  • 2 teaspoons coconut aminos
  • ¼ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • a pinch salt and pepper

Instructions

  1. Combine the marinade ingredients in a bowl or jar and mix well.
  2. Marinate the pork chops in the mixture for 4-8 hours in the refrigerator.
  3. Preheat the grill to medium-high heat.
  4. Remove the pork chops from the marinade and grill for 8-12 minutes on each side until they reach an internal temperature of 145°F.
  5. Let the pork chops rest for 5 minutes before serving.
  6. Prepare the honey mustard sauce by mixing all the sauce ingredients in a bowl and seasoning to taste.
  7. Serve the grilled pork chops with the honey mustard sauce drizzled on top.
